I can't believe it is February already. Wow. Last month we did the Pantry Challenge, trying to just use up things that we had in the pantry, fridge, and freezer. We also tried to keep grocery spending to a minimum, only buying produce, dairy, and things like that. We did pretty good overall. We did buy a few other things, but for the most part we stuck to the plan and we did spend a lot less on groceries in January than we usually do. It was a good experience, and I hope to do it again sometime!
Now for February, I need to stock up on some of the basics and try to stay on budget. I'll try to elaborate more on the budget later, but for now, here is this week's menu. Happy Cooking!!

Menu looks great! We working on the budget also, the food bill is out of control :) I love homemade salad dressings, they are the best!
