Spanish Rice
Spanish Rice
1 cup rice (uncooked)
1 med. onion (chopped)
2 T. oil
2-4 cloves garlic (minced)
2 1/2 cups water (start with 1 1/2 cups and add more as needed)
8oz. can tomato sauce
1 1/2 tsp. salt
3/4 tsp. chili powder
1/8 tsp. garlic powder
Combine rice, onion, oil, and garlic in a pot or large pan. Cook over medium heat until the rice is golden brown and the onion is tender.
Stir in the remaining ingredients and bring to a boil. Reduce heat, cover, and simmer about 30 minutes, stirring occasionally.

Yummy! I want some! I was just thinking that Mom found the best Mexican rice recipe and also made the best salsa recipe too! We are so blessed. :)
