Menu Planning Monday 11-16-09



I spent most of last week out of town, but I'm back this week with another menu plan.  I'm trying to be creative with meals and use up ingredients already on hand.  So...here is my cheap and simple menu for this week!  Happy Cooking!!


Monday - Lemony Lentil Greek Soup, Cheese Quesadillas

Tuesday - Pinto Beans, Roasted Garlic & Olive Oil Cous Cous, Corn, Biscuits

Wednesday - Perfect Potatoes, Salad w/Homemade Dressing

Thursday - Leftovers

Friday - Homemade Pizza, Salad

Saturday - Soy Ginger Asian Pasta, Sauteed Veggies

Sunday - Leftovers

Breakfasts -
Granola
Banana Flax Muffins
Banana Oatmeal
Grits, Eggs, Biscuits
Blueberry Muffins

Lunches -
Pasta Salad
Sandwiches
Leftovers
Bean, Rice, & Cheese Burritos
Salads

Sounds delicious, I'm starting a long journey this week, my family and I are trying to cut off on our meat intake and will me making 70% vegan meals... hope it works out :)

I really like the variety in your menu and the emphasis on grains and vegetable proteins. I cook my pinto beans in the crock pot; do you? We have really come to love them that way. Thanks for sharing.

Randall & Rachel Beita and Alison @ Hospitality Haven...I hate to disappoint you both, but the Soy Ginger Asian Pasta is not my own. I want to learn how to make Asian and Japanese and I bought a box to see if I could try it out and to get a better idea of how to imitate it. Sorry! I'll be sure to let you know when I do have my own recipe!

Debbie...Thanks!! No, I don't cook my pinto beans in a crock pot. The only reason being that I don't have one. It is on my wish list!
