Menu Planning Monday 4-5-10

I have great goals for this month.  We've made it four days into the month without a trip to the grocery store!  That's doing pretty good, considering that we're out of quite a bit of stuff.  Somehow we still manage to have enough to eat though.  The weather is getting a lot warmer here, and I find that it starts to change my tastebuds and makes them want Summertime foods.  I'm really ready for watermelon!!  Anyways...here's my menu for this week.  Happy Cooking!!

Monday - Fresh Veggie Quesadillas, Fruit

Tuesday - Baked Ziti, Steamed Broccoli

Wednesday - Bean, Rice, & Veggie Casserole, Salad w/Homemade Dressing

Thursday - Leftovers

Friday - Chicken Rice Casserole, Baked Potatoes

Saturday - Build your own: Taco, Burrito, or Salad

Sunday - Grits, Eggs, Biscuits, Apple Butter

Breakfasts -
Honey Crunch Granola
Banana Flax Muffins
Yogurt w/Fresh Fruit
Whole Wheat Toast
Blueberry Muffins

Lunches - 
Taco Salad
Baked Potatoes

Sounds like a terrific menu! I am craving summer foods as well - picked up a pineapple at Aldi on Sat. for only $1.49! I am going to try your Bean, Rice and Veggie Casserole next week. I linked to two of your recipes this week - the pie crust and the peanut butter granola. Have a great week!

Sounds great! Mmmm... apple butter. :) I just pulled a batch of granola out of the oven. Love having it around for breakfasts! Have a happy week!

I can not WAIT for watermelon! It is my favorite fruit. My tastes are changing too...and I just feel like I got set on a wintery menu! Oh well, change is good!
