Menu Planning Monday 2-8-10
It's hard to believe that another week is already here. It seems like this past week just flew by. We did really good with our menu. We ended up getting by without making a couple of the meals that I had planned on, so we'll just roll them over to this week's menu.
I've also started a new challenge this month, which I will be doing for the rest of 2010. The 200 Challenge is my new goal to spend only $200 per month on groceries for a year. Monday - Spaghetti, Garlic Bread
Tuesday - Mexican Wrap Casserole, Black Beans
Wednesday - Pinto Beans, Green Beans, Biscuits (from last week)
Thursday - Leftovers
Friday - Grits, Eggs, Biscuits
Saturday - Minestrone Soup, Breadsticks
Sunday - Costa Rican Pinto, Chips
Breakfasts -
Oatmeal
Date Muffins
Honey Crunch Granola
Whole Wheat Toast w/Honey & Cinnamon
Lunches -
Tuna Salad w/Crackers
Peanut Butter & Honey Sandwiches
Leftovers
Bean, Rice, & Cheese Burritos
Fruit Smoothies

Your 200 challenge sounds amazing. I hope you can do it.
One of our frugal meals is bread soup. In a pot of broth with chopped garlic in it, I add chunks of bread ends and pieces... all those odds and ends some people throw away. Cook until the bread falls apart and it thickens. We garnish with a little shredded cheese or parmesan. A can of chopped tomatoes is nice too.
