Menu Planning Monday 9-14-09


I've been sick the last couple of days so I've been a little out of it, but I did manage to plan my menu while lying around resting on the couch. :-) This budget thing can be so hard sometimes! We went over a little bit last week, so this week is just buying the minimum and staying under the budget. It's amazing how fast food prices can add up. Also, I often cook large portions of many of our meals (especially soups), so I will be putting some food in the freezer this week too. Anyways, here is our cheap and simple menu for this week. Monday - Potato Cheddar Chowder, Salad w/Homemade Dressing

Tuesday - Mac & Cheese, Salad, Green Beans

Wednesday - Tortellini with Veggies

Thursday - Lentil Soup, Quesadillas (from last week)

Friday - Vegetable Pot Pie, Salad w/Homemade Dressing

Saturday - Leftovers

Sunday - Brown Rice and Black Bean Casserole (modified)


Breakfasts -
Granola
Apple Muffins
Lemon-Blueberry Dream Muffins
Oatmeal w/Honey and Cinnamon
Grits, Eggs, Biscuits w/Apple Butter
Oatmeal-Apple Pancakes

Lunches -
Leftovers
Mimi's Wraps
Salad w/Homemade Dressing
Sandwiches
Taco Salad

I love how wholesome your meal plan is, while still being frugal! I'm checking out two of your recipes -- the brown rice and black bean dish, as well as the oatmeal apple pancakes :)

I've been reading menu plan monday posts for over a year now and if anyone needs to particpate it's me.

I usually just write the menu plan down on my calendar and it's more for my grocery list than anything.

The problem is sometimes I do not follow through and then I'm winging it again at dinner time!
