Menu Planning Monday 10-26-09

I'm back!  Back at menu planning that is.  Last week was really strange.  I didn't really have a menu plan to go by and it definitely seems like I spend more money when I don't and I end up with a lot of last minute throw-together meals.  Throw-together meals are not always a bad thing though.  They do challenge me to look through my cabinets and freezer and just use up stuff that I have stored there.  But I am so glad to be back with a plan this week.  Here goes...  Happy Cooking!!

Monday - Pinto Beans, Rice, Broccoli, Carrots, Biscuits

Tuesday - Vegetable Pot Pie, Salad w/Homemade Dressing

Wednesday - Black Bean Soup, Chips

Thursday - Leftovers

Friday - Chimichangas, Chips & Salsa

Saturday - Leftovers

Sunday - Spaghetti (freezer), Garlic Bread

Breakfasts -
Whole Wheat Toast w/Butter or Honey
Oatmeal w/Honey & Cinnamon
Honey Crunch Granola
Blueberry Muffins
Grits, Eggs, Biscuits, Apple Butter

Lunches -
Pasta Salad
Costa Rican Pinto
Baked Potatoes
Salad w/Homemade Dressing
Tuna Cheesies
Leftovers

Great menu. I feel the same way if I don't have my week planned. I love being able to budget for sure.

It looks like Beans are a popular meal idea this week.
It's suppose to be in the 60's in Vegas. Maybe I'll break out the crockpot next week and make some beans.
Looks like you have a yummy week planned.
Have a great Halloween or Harvest Festival!

I love Black Bean Soup, I need to start making it now that the weather has started to cool off in Utah.
