Menu Planning Monday 5-11-09


It's Monday again already. WOW. Last week was busy and we ended up eating a few meals at my parents with my sister and brother-in-law who are here for a short visit from out of state. So...that means we get to recycle a few of last week's meals for this week. Which means we are saving money, so I don't mind.

I also have been working really hard at trying to stay on our grocery budget (which I had gotten a little lax at), and have been doing much better at that. It is so freeing and I love the sense of accomplishment that I get when I know that I am managing wisely the money that my husband works so hard and so faithfully for in order to provide for our family. (I am SO VERY blessed!) I think I'm rambling now, so here is this week's menu, complete with a few new recipes and links. Happy Cooking!!

Monday - Lentil Soup, Pasta Salad

Tuesday - Vegetable Quesadillas, Chips & Salsa

Wednesday - Butternut Squash Risotto? (Girl's Night)

Thursday - Fettucine Alfredo, Tilapia, Sweet Potatoes (from last week)

Friday - Leftovers

Saturday - Broccoli, Rice, & Cheese Casserole, Salad

Sunday - Minestrone Soup (from last week)

Yeah, we sat down and looked at our budget last week and realised groceries was one of the areas we had been going over on, so we're eating from the freezer this week and then next week I have to shop frugally.

butternut squash risotto it is! i want your lentil soup recipe too, i have one that i like but we love lentils and any way we can use them is a plus!

Sherry, I've actually never had Butternut squash risotto. My friend Heather volunteered to make it for girl's night this week. I think it has squash, rice, broth, onions, and a few other ingredients like spices maybe?
