This week we're trying to keep it simple and cheap. I plan to cook mostly using items already on hand and I hope to have just one small run to the store this week. Here goes...
Monday - Black-eyed peas, corn bread, greens (I didn't end up making this one from last weeks' menu)
Tuesday- Tomato soup, grilled cheese sandwiches
Wednesday - Leftovers
Thursday - Blueberry pancakes
Friday - Tostadas (lettuce, tomatoes, beans, rice, cheese, salsa, sour cream, etc. on a tostada shell)
Saturday - Baked potatoes, salad
Sunday - Leftovers
I also plan to bake bread and make some homemade granola, pumpkin bread, apple spice cous-cous, raspberry tea, and baby food to store up for snacking, lunches, and freezing. Hope you all have a great week!

Your menu sounds great and cheep and as always helps to inspire me! Thanks! I need to sit down and plan next weeks menu too. Robby and I are also trying be more frugal with meals and are not going to go shopping this week if we can help it so I am also cooking out of the pantry.
You can add some Spanish rice to your tostadas if you want a complete protein, as I know you are trying to watch that...

You are so ambitious to cook all those extra things. I also do baby food stored up for the week. When we have a soup or veggie I store in Gerber jars for the rest of the week. I don´t have room to freeze though but at least I am saving from having to buy even more Gerber’s and I am feeding my baby healthier.
I so long to make bread. Hope to do it this week too. It has been so long.
