Here we go on week three of the Eat From the Pantry Challenge! So far, so good. It has been great to focus on using the food that we have and not spending so much. So here is the menu for this week. Happy Cooking!!
Monday - Lentil Chili, Whole Wheat Bread
Wednesday - Fettuccine Alfredo, Whiting, Biscuits (from last week)
Thursday - Black-Eyed Peas, Cornbread, Collard Greens
Friday - Leftovers
Sunday - Banana Pancakes

Just wanted to share with you that I am a full-time SAHM to a 2-year-old and 1-year-old. I love reading your blog and have really enjoyed your recipes. Today I made the pie crust (so great to find one that doesn't have shortening in it!) and your homemade salad dressing. I have also made your banana flax muffins and - my personal fave - the peanut butter crunch granola. Thank you so much for taking the time to post all of this and your insights to help entertain and encourage a SAHM like me. I also enjoy your posts re: your faith. I am fighting to find my way back to a better relationship with God and appreciate your insights on this, as well.
