Apple Cinnamon Muffins



I wanted a healthy muffin recipe that I would love feeding to my babies, and this one is great because it doesn't have much oil or sweetener in it.  These muffins are sweetened only with applesauce, apple juice, and raisins.  As a result, the aren't overly sweet, just healthy and hearty.  Not only do my little girls love them, but so do my hubby and I!  :-)


Apple Cinnamon Muffins
2 cups flour (I use 1 c. whole wheat, 1 c. all purpose)
1 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 cup apple juice
1/2 cup applesauce
2 Tbsp. oil
1/2 cup raisins

Preheat oven to 350 degrees.

Mix together the first 5 ingredients (dry ingredients) in a bowl.

Add the remaining ingredients and mix until combined.

Spoon into a greased muffin pan.

Bake for 20-25 minutes or until knife inserted in the center comes out clean.

*Makes 12 muffins.

OK my dear daughter... these sounded so good and I copied and printed the recipe... now I am going to make them except one little alteration. I am going to do half with raisins and the other without... I do not like cooked raisins that much :) but Da does. Will let you know how they turn out :)

Lula Mae will love theses! They will be a great breakfast food for her (I have been struggling to find different breakfast things for her since she started refusing cream of wheat and oatmeal)! I wonder how they would freeze?

Can't wait to try these out. I love having a fresh, warm (and healthy!) batch of muffins ready in the morning when my hubby and kids wake up. These sound perfect - thanks for the recipe!

Amy, these muffins do freeze well. I just throw them in a big ziploc bag after they have cooled and then pop them in the freezer. They only take a few seconds to de-thaw in the microwave.
