Honey Crunch Granola
I love granola. It's one of my favorite things to eat. I've tried several recipes for homemade granola and finally decided to make up my own. Yep, I did some experimenting. :-) I was really happy with the results, so I thought I'd share the recipe with you all!
Honey Crunch Granola
3 cups old fashioned oats
1/2 cup chopped nuts (I used walnuts & pecans)
1/2 cup wheat germ
1/4 cup ground flaxseed (or whole)
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 cup vegetable oil (or applesauce)
1/4 cup apple juice
1/3 cup honey
1 tsp. vanilla
Preheat oven to 350 degrees.
Mix dry ingredients together in large bowl.
In a small bowl, mix together the wet ingredients.
Combine the wet and dry ingredients and mix well.
Spread the mixture in a 9x13 pan.
Cook 20-30 minutes, stirring every 10 minutes, until golden brown.
Allow to cool. Store in an airtight container.
Enjoy!!
*You can also add mix-ins of your choice such as dried fruit and coconut. I like mine with coconut and dried cranberries.

What a great recipe made with honey and apple juice! Have you tried it with applesauce rather than oil? If it works, that's wonderful!!

SnoWhite...I have tried it with applesauce and it did work. I do like it a little better with the oil though.
Made this granola this afternoon and it is FANTASTIC! I used 1/8 c. oil and 1/8 c. applesauce. It also made my house smell absolutely dreamy, too. Thanks again for another great recipe. (You totally have me hooked on granola now. I can't go a day without it.) :-)
