Peanut Butter Granola

Here is the first recipe I have to share with you all. I love this granola! It is so simple to make, full of protein, and SO YUMMY. I could eat it any time of the day.


Peanut Butter Granola

3 cups oatmeal, uncooked

1 ½ cups wheat germ (I also use ground flaxseed sometimes or both)

½ cup chopped nuts

¼ cup vegetable oil

2/3 cup honey

¾ cup peanut butter

1 tsp. vanilla

1 cup raisins or other dried, chopped fruit (optional)

½ cup coconut (optional)


Mix together the oatmeal, wheat germ, and nuts. Combine the vegetable oil, honey, and peanut butter in a medium saucepan; heat over medium heat or in the microwave until liquidy. Add vanilla and pour over the dry mixture, mixing thoroughly. Spread mixture onto a 9” x 13” baking sheet. Bake at 300˚ for 30 minutes, stirring every 10 minutes until lightly browned. Add the coconut, raisins, or other dried fruit when cool. Store in the refrigerator in a covered container.


* I usually just eat mine with a little bit of shredded coconut, but it’s also good with dried pineapple and papaya.

that looks really tasty! I bet it's excellent with dried fruit. I've just started using olive oil in my granola -- and it makes it so crunchy, which is perfect for a yogurt and applesauce topping.

You are welcome! So glad you and your kiddos are enjoying it! I often make a double batch so it will last longer. ;-)
