Menu Planning Monday 3-23-09

It's a bit late to be putting my menu up, but I do have good excuse. We have been quite sick here over the last few days (well, at least Mommy and Daddy have,) so things have been rather crazy with trying to just take care of the babies and my sick hubby. :-( Thus my menu planning has fallen a little behind. We'll be eating more yummy soup again this week...it's a good thing to eat when you're sick. So here goes... Happy Cooking!!

Monday - Potato Cheddar Chowder, Potato Rolls (this soup is one of our new favorites and we're having it again since we're in the soup mood...aka sick.)

Tuesday - Enchiladas, Spanish Rice (from last week)

Wednesday - Minestrone Soup, Potato Rolls

Thursday - Pinto Beans, Mashed Potatoes, Green Beans, Biscuits

Friday - Leftovers

Saturday - Eating Out (It's my Birthday!! We plan on going out of town.)

Sunday - Homemade Pizza, Salad

Extra cooking for snacks, lunches, etc:
Sweet Potatoes
Whole Wheat Bread
Cinnamon Rolls (yes again...I'm craving them)
Peanut Butter Granola (craving this too)

do you make your sweet potatoes any special way for a snack?

Snow White,
I usually just bake them in the oven then peel the skins off and mash them, adding a little cinnamon and sometimes some butter and nutmeg too. I will clarify that this is usually for my 16 month old to eat although I love to eat them this way too!!

Yummy Yummy once again! Hope you guys get better soon. I´m afraid we gave you our colds we have been sick the last two weeks down here. Randall even got a throat infection!

We've all just gotten over the yucky colds here. This time it seemed to linger forever...I hope you are feeling better soon!

We love soup too! I haven't ever made minestrone...but now I'm craving it and will have to attempt it :)
