Menu Planning Monday 1-26-09

It's been awhile since I've been on the menu planning bandwagon, but I am happy to announce that I am now officially back on! Taking a break was good as we were blessed by many church members, family, and friends bringing meals during my time of bedrest late in my pregnancy and after the birth of our twins. I have been cooking some, but it has been scattered and disorganized and I am ready to do better at my planning again. So, here goes!

Monday - Black-eyed peas, cornbread, greenbeans, rice

Tuesday- Burritos, spanish rice, chips

Wednesday - Leftovers

Thursday - Lemony Lentil Greek Soup

Friday - Sandwiches

Saturday - Enchiladas, spanish rice, chips

Sunday - Leftovers

Yummy! So glad you are able to do this agian. Try do do prep work for dinner in the morning that way when you are tired at night and nothing seems to be going smoothly all you (or Matt) have to do is mix and cook. When I do this my whole day seems to go better as I am not stressed over dinner and what to do.
