Menu Planning Monday 2-22-10


We are in the home stretch for The 200 Challenge for February!  I'll be honest, it's getting a little hard around here without chips and cheese.  Brings back memories of the pantry challenge.  But we aren't starving yet, and we're not quite out of food either, so we're holding out for one more week!  I'm already dreaming making a list of food to buy for next month.  :-)  Here's the menu for this week.  Happy Cooking!!


Monday - Costa Rican Pinto w/Corn Tortillas (from last week)

Tuesday - Tomato Soup, Grilled Cheese

Wednesday - Mexican Layer Casserole (I'll post the recipe later this week), Fresh Fruit

Thursday - Leftovers

Friday - Peanut Butter & Jelly Sandwiches, Apples

Saturday - Pinto Beans, Corn, Chesapeake Spiced Salmon Cakes, Biscuits

Sunday - Spaghetti, Garlic Bread

Breakfasts -
FREE IHOP Pancakes! (Tues. February 23rd)
Date Nut Muffins (from last week)
Oatmeal w/Dried Fruit
Applesauce Bread
Apple Cinnamon Muffins
Cereal

Lunches - 
Leftovers
Sandwiches
Minestrone Soup
Burritos
Peanut Butter Crackers, Fruit

I am making myself stay out of the store next week! I can go crazy in a grocery store... way worse than any clothing store! Menu planning has been much more fun since I have been staying out of the store though. It makes me use my imagination a lot more and it is just more fun altogether! Can't wait to link up and see how every one did in Feb!!!!!

Congrats on sticking to your budget! $200 is impressive for a monthly grocery bill. I need to work on that for our family. You are a strong woman to go without cheese...I think my lil' ones would freak out without cheese.

Wow I am impressed that you are able to spend only $200 a month on groceries! This is an amazing challenge. We spend at least $150 a week! But, living in CA ...it is just what it is... but, I try to manage with keeping costs low by meal planning!

Good job in keeping up with your challenge!
