How to use overripe bananas

My favorite way to use overripe bananas is probably freezing them. I hate wasting food, so when the bananas get too ripe, I just peel, slice, and place them on a plate. Then I stick the plate in the freezer until the bananas are frozen. Once frozen, the bananas can be used in smoothies, stored in a ziploc bag in the freezer for smoothies or ice cream later, or eaten as is for a cool, sweet snack.

Another great way to use bananas when they're a little too ripe (but not excessively so), is to make them into banana pancakes. Or make banana bread with them. We also like to eat them in banana oatmeal.

I'd love to hear some more ideas! How do you use your overripe bananas?

I let bananas get extra ripe just so I can make banana chocolate chip cookies. My favorite!!

We make banana bars. I've been tempted to try a banana-foster type sauce for oatmeal too.

Good idea about the smoothies. We love them here. So do you cover them at all when you freeze then or just put then on the plate and in the freezer as is?

Yummy ideas...banana bars sound really good.

Brideleon, I don't cover the plate, I always just stick it in as is, but if it made you feel better then you could cover with wax paper or plastic wrap.
