Menu Planning Monday 4-12-10

This week is going to look pretty weird menu-wise since the menu will be really similar to last weeks'.  I had forgotten how much we were going to be away from the house this past week, so I ended up with a lot of meals that we didn't need to make.  That's good though!  We've had lots of fun visiting with some family here from out of town.  Plus it makes for an easy menu this week!  We are still way under budget for April, and I hope we can stay that way.  Also I made a Green Smoothie for the first time this week!  It was really yummy and you really couldn't tell it had raw veggies in it.  I've been getting really into smoothies lately because I love being able to throw all kinds of healthful things into my blender and then end up with a super tasty creation!   Hope you all have a great week.  Happy Cooking!!

Monday - Homemade Pizza, Salad w/Homemade Dressing

Tuesday - Mexican Layer Casserole and other stuff (eating with family)

Wednesday - Chicken Rice Casserole, Baked Potatoes, Salad

Thursday - Leftovers

Friday - Build your own: Taco, Burrito, or Salad

Saturday - Mac & Cheese, Tuna Salad, Sweet Potatoes, Biscuits

Sunday - Grits, Eggs, Biscuits, Apple Butter

Breakfasts -
Cinnamon Rolls
Yogurt w/Granola & Fresh Fruit
Apple Cinnamon Muffins
Cereal
Oatmeal

Lunches -
Green Smoothies
Sandwiches
Veggies & Dip
Leftovers

Reading your menu I realized I hadn't made mac 'n' cheese in a while! Thanks for the reminder. :)

Awesome menu. I am trying hard to stay within my food budget, but with two growing boys every week is a challenge.

I found you from MPM.

I started weekly menu link up on my blog today. You can come over and link up if you like as well.

Green Smoothies... sounds like a great way to get in all those fruit and veggie servings I'm seriously lacking. I would love to know what you've put in them.
