Menu Planning Monday 11-2-09



This week is going to be busy, but we still have to eat!  So here is what's on our menu this week.  Happy Cooking!!


Monday - Italian Pasta, Corn, Garlic Bread


Wednesday - Black-eyed Peas, Cornbread, Mashed Potatoes

Thursday - Lemony Lentil Greek Soup, Pasta Salad

Friday -Leftovers

Saturday - Abigail's Birthday Party!

Sunday -Out of town

Breakfasts -
Blueberry Muffins
Grits, Eggs, Biscuits
Oatmeal Raisin Muffins
Oatmeal

Lunches -
Leftovers
Baked Potatoes
Pasta Salad
Peanut Butter Balls

Yum! Your minestrone soup looks terrific. Ninja Hubz refuses to eat anything with beans, but I may have to make some of that for myself... I love soup, it is such an easy way to get a lot of veggies in a meal!

Looks really good! I'm excited to try your minestrone. Have you done that in a crock pot? I was also wondering about the Black-eyed Peas - what do you do with them?

I haven't done the minestrone in the crockpot, but I don't have one actually. I need to get one though. I would think you could do that...only it doesn't take a long time to cook, so I wouldn't leave it in all day probably unless it was on really low?

For the black-eyed Peas, I just do the bring to a boil for a few minutes, one hour soak, and then rinse, fill with water again, and simmer until done. Then we season with salt and pepper to taste at the table. And sometimes we crumble our cornbread in the beans as well. We think it's really yummy! :-)

I love the different ways people prepare black-eyed peas. I soak mine overnight, then rinse and sort. I season with garlic, salt and pepper and a piece of ham steak.
I'm always looking for different meal ideas. That's why I love MPM.
