Coconut Milk Ice Cream

We made some very yummy homemade ice cream today. This is a blender ice cream, so it's really simple and easy to make, and doesn't require an ice cream maker. Plus, as an important added bonus...it is actually good for you! No sugar, no preservatives, and no artificial ingredients. So without further ado, here's our yummy homemade ice cream recipe! I hope you enjoy it as much as we did!!

Coconut Milk Ice Cream

1/2 can coconut milk (refrigerate before using- shake well)
1/2 tsp. vanilla
2-3 frozen bananas

Put all ingredients into blender and blend until smooth. It's that simple! I do like to slice the bananas before I freeze them. This helps them to break up easier.

I think we may try some other flavors next time, so here are some ideas of add-ins.
blueberries
strawberries
raspberries
mango

For added nutrition, try adding:
ground flaxseed
wheat germ


*This ice cream is a soft serve ice cream and I haven't tried freezing it so I don't know how well it will freeze. That's not a problem at our house though since we can eat up a whole recipe at a time!

Hi Sarah, sounds great! How many ounces of coconut milk? The kind I buy comes in a half gallon carton.

bhibbitts, that's the kind I usually buy now too. A can is about 14 or 15 ounces so half a can would be 1/2cup + 1/3cup...so a little more than 3/4 cup. Hope that helps!
