Fresh Veggie Quesadillas


This recipe is a great way to incorporate fresh veggies in a simple meal. At first my hubby was a little skeptical about zucchini being in the quesadillas (especially raw), but after he tasted them he was hooked! These are SO good!!


Fresh Veggie Quesadillas
shredded zucchini
diced tomato
black beans
shredded cheddar cheese
flour tortillas

The measurements for the ingredients really depends on what ratio of vegetables you like.

Just mix together some of each of the zucchini, tomatoes, and black beans until it looks good to you.


Spread some of the veggie mixture on half of the tortilla.


Sprinkle the cheese on top.


Fold the tortilla over in half. Place in a pan over medium heat and cook on both sides until golden brown.

Slice and serve with sour cream.
